have heard so much about Weimar and what they are doing with NEWSTART but never got a chance to visit until now. It was a really blessed trip and I hope to be able to go as a Professional Observer to learn more about how they treat their "health guests". Some people go there with no hope of living because doctors have written them off as almost-on-their-death-bed. There was a person who was on 50 difference type of medications but was off all meds when he left! Someone lost 25 pounds...and another person was able to lower their cholesterol, etc...Many amazing testimonies....!! Check out their website for more information.

Idea for nutritious quick Breakfast- Mash a banana with Almond Butter ( Blended almonds, it can be bought at any health food store) and spread on bread. Sprinkle some FLAXSEED.

At the request of the couple, we made this cake for them..
This decoration cake is made of yellow pound cake, strawberry cream, fresh strawberries, strawberry jam, covered with vanilla butter cream.
Sheet cakes are for guests - sponge cake, layered with fresh strawberries/ jam and freshly whipped cream. The two sheet cakes fed more than 100 people.
The bride's favorite flower is pink roses.

2 1/2 cup milk
1 cup non dairy sour cream
1 1/2 pkt instant bamama cream pudding and pie filling mix
8 oz can crushed pineapple ( drained)
In trifle bow, layer fruits. In medium bowl, combine milk, sour cream and blend well. Add pudding mix: beat until well-blended, about 2 minutes. Stir in pineapple. Spoon pudding mixture over fruit. Cover, refrigerated for several hours to blend flavors. 12 ( 3/4 cup) servings
Spray Bragg Amino Acids onto the nuts and bake for several minutes until crisp. :)
The best vegan Tartar sauce!
1 c veganaise
1 T lemon juiced
1 T finely chopped green pepper
1T finely chopped celery
2T finely chopped dill pickle
1 T finely chopped pimiento
1 T grated onion
2 T finely chopped parsley
- Combine and chill
It goes with tofu walnut balls
2 c soft bread crumbs
1/2 cup finely chopped walnuts
1/2 c quick oats
1/2 c finely diced onions or 1/2 c dried onion flakes
1/2 tsp garlic powder
1 tsp onion powder
1/2 tsp vege-sal
1/2 tsp sea salt
1 tsp italian seasoning
2 tsp McKay's vegan chicken seasoning
16 oz firm tofu
1/2 c water
2 T Bragg's Liquid Aminos
Whiz bread crumbs, walnuts, oats and fried onion in food processor. Add other seasonings. Blend tofu with Liquid Aminos and water. Add to bread crumb mixture. Mix well. Use an ice cream scoop to make balls. Place on oiled cookied sheet. Bake at 350 until brown. If desired, flatten to make patties. These balls freeze well.

The happy couple...finally married!
True love is a such a wonderful gift from God. It is able to touch the deepest soul of the heart and make one's heart flutter, steer one towards a different course that is unimaginable. It comes at the most unexpected moment and God knows what's best for each of us. I am so happy for this wonderful couple who finally got married and am so excited as they start a beautiful journey together. :)

I really enjoyed the fellowship of Cheri's family and relatives. They are such warm, genuine, caring and loving people whom I have gotten to love. I ate so much over this weekend- Laksa, different types of Bao, lotus glutinous rice, Hor Fun, including buffets at Chinese restaurants, Dim sum, cherries from WA, ..etc.. Although I miss them, I am glad to be back into my little cove where I can blog, check FB, and go back to work. I love my job! ^^ I thank God for mini vacations like this. It reminded me of the importance of taking time for "self" to relax, appreciate my family, enjoy the people and everything around me. Life is short, live it to the fullest! :)
