Happy Fathers' Day ...

to my one and only Papa! I just want to say how much you mean to me and I love you. You are a gift to the world, and to many others like me. You have been the center-point of my life in many ways, reminding me of who I am and sharing your bits of advice to guide me through life's maze. I will not be where I am today without you. You taught me the importance of doing my best when I commit to a project and finish it well.
It was my first debating competition in Secondary 3. You knew that I was nervous and stayed up with me until 3 AM to refine my debating speech. This gave me the confidence I needed to win the best speaker award and our team to victory. You had my back.
Even thought it was 13 years ago, I remembered this clearly. It was my first quarter in the USA at La Sierra University, and I took a class which required Shakespeare reading of 12th Night. You bought these books in Singapore and read them up on your own to share ideas on how I can better my final paper. I did not expect you to do it but you did it. You gave so much of yourself to me....

Life is short, I constantly have to remind myself to express my love and thanks to those around me.
I made these vanilla and chocolate cupcakes for church's father's day potluck, a friend's birthday and a graduation party. They are relatively easy to make and I really like the lightness of the cupcake with a chocolate ganache.

Here is the ganache recipe. I replaced light corn syrup with honey ( corn syrup is not good! ) and soy milk for whole milk.

1/2 cup unsalted butter
1/4 cup soy milk, warmed
1 tablespoon honey
2 teaspoons vanilla extract
4 ounces bittersweet chocolate chips ( i used Ghiradelli)
2 cups confectioners' sugar, sifted

Heat soy milk on the pan. Once warmed, add butter, honey, and vanilla until butter is melted. Decrease the heat to low, add the chocolate, and whisk until melted. Turn off heat, add the powdered sugar, and whisk until smooth. Place the mixture over a bowl of warm water and dip the cupcakes immediately. Top with berries. Allow glaze to set for 30 minutes before serving.
