
Made this for the Cs' birthday and farewell lunch today. It's my first time making it but it turned out pretty good. Maybe I can work on the decoration aspect. ;p
Ingredients:
1 box ready-bought sponge cake (Sara Lee cake is an option)
1 box strawberries
2 mangoes
Blueberries/kiwis, for decoration
Strawberry sugar-free jam
Topping:
1 (8oz) container Cool Whip
3 instant sugar free vanilla pudding
3 teaspoon vanilla powder
To assemble the cake:
Using a serrated knife, slice cake horizontally into 3 layers. Spread strawberry jam over each cake layer. In a deep bowl, line sliced strawberries nicely. Carefully lift off top layer and add it into the bowl. Cover with topping. Add sliced strawberries or mangoes. Repeat with other 2 layers. Spoon remaining cool whip on top and arrange remaining strawberries and mangoes/blueberries/kiwis over the cream. Refrigerate until serving time.
