Found this in the Weimar Cooking Studio...

Bryan and Miae's Wedding

At the request of the couple, we made this cake for them..
This decoration cake is made of yellow pound cake, strawberry cream, fresh strawberries, strawberry jam, covered with vanilla butter cream. 

Sheet cakes are for guests  - sponge cake, layered with fresh strawberries/ jam and freshly whipped cream. The two sheet cakes fed more than 100 people. 
The bride's favorite flower is pink roses. 
Congratulations to the happy couple! :)
 I have been to several weddings this year.... It almost seems like a wedding marathon! However, at each wedding, it never fails to remind me of how amazing God is. The unity of two people for life is a moment to celebrate. God provided Bryan someone so lovely from Korea.... and he said that God has a plan for each of us. In HIS time, he makes all things beautiful. We need to wait upon the Lord and trust in Him. He has that someone special for each of us. Through all the questions and doubts, He will reveal and work things out. I'm so happy for this couple and wish them the best as they start a new journey together!

BHI



BHI stands for Behavioral Health Institute

The is a new building that combines the Family Marriage Therapy, Psychology Department and Behavioral Medicine Center into one! All the outpatients at BMC will be moving across the street to the BHI.


These are some pictures of the grand opening ceremony.

Another thing I've been working on is planning for this project. We are providing meal service for the Outpatients like Eating Disorder (ED) and IOP ( Intensive Outpatient). Hence, food will be prepared at the BMC and transported in a van to the BHI. 
I am excited! :) We are expected to move in anytime soon.....

Happy Cinco De Mayo!

How to make Fresh Green Salsa?
Ingredients:
1- 2 pounds Tomatiloes
1 onion
Cilantro
Chili serano ( as many as you want)
Salt
5 cloves Garlic
Pepper
Boil the tomatiloes
Toast the chilies (green chili) on fire
Chop Cilantro, onions finely

In the blender, add tomatiloes, half of the onion, garlic, handful of cilantro, salt and pepper, and as many Chili sernaos as you want.

Placed blended mixture into a bowl, add chopped onions and chopped cilantro.
Taste and season accordingly.


Recipe for RED Salsa ( fast)

Blend cilantro, black pepper and Jalapeno with water
Add into Picanete salsa base
Add in chopped tomatoes and onions
To Serve: Fry Tortilla chips or store-bought chips. :)

For the colored rim on the glass:
Add red coloring to sugar...Dip glass in water, followed by the red sugar. :)

Strawberry Swirl Brownie Cheesecake

An easy brownie cheesecake that I've made a few times. To make it healthier, substitue applesauce for oil!! I use strawberries because this is the strawberry season. Any type of berries can be used.

Brownie Crust:
1, 20 oz package or 1 pouch Ghirardelli Double Chocolate Brownie Mix
1/3 cup water
1/3 cup vegetable oil
1 egg
1 Tbsp vanilla Essence

Cheesecake:
1 cup (8 oz) cream cheese, softened
1/4 cup sour cream
1 egg
1/3 cup sugar
1/2 teaspoon vanilla
1 cup fresh or frozen strawberries, mashed

Directions:
Preheat oven to 325°F. For Brownie Crust: In medium bowl, stir together brownie mix, water, oil and egg until moistened (about 40 strokes). Spoon batter into lightly greased 9-inch springform pan. Bake 10-12 minutes.
For Cheesecake: Place cream cheese and sour cream in medium bowl. Using an electric mixer, mix on low speed 2 minutes or until smooth. Add egg and mix until blended. Add sugar and vanilla and continue to mix until smooth. Spoon cream cheese mixture randomly over brownie crust. Drop spoonfuls of strawberries randomly over cream cheese mixture. Swirl with tip of knife for marbled effect. Bake 55-60 minutes or until filling is set. Cool thoroughly. Store in the refrigerator.
Makes 12 servings

Healthy People 2010 & Pictures

To make, purchase a cone-shaped foam and use toothpicks to stick the cut fruits into the foam.
The "palm tree" effect with the leaves on the top came from a "fake" plant that we took apart...

I really enjoyed Dr. DEAN ORNISH's presentation!
One pointer he shared was:
"I" = "I"LLNESS
"WE" = "WE"LLNESS
To have optimal health and wellness, WE need to be in a community where we can be connected with others. We are created to be loved -and love.
Illness results when "I" comes into place, and neglect the importance of others.

Inside the old walk-in freezer and refrigerator....now the whole space is a walk-in refrigerator! Expected Completion is in May 2010...can't wait! :)
