Caramel apple cheesecake bars w/ streusel topping

I found this recipe on food network, and adapted it by adding less sugar and more apples. Also, I added lemon juice over the apple to prevent discoloration of the apples.  It turned out delicious...we had second servings. :)

2 cups WW pastry flour
1/3 c brown sugar
1cup butter
16 oz cream cheese
1/3 c brown sugar
2 eggs
1tsp vanilla extract
4 granny smith apples, diced into cubes
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Streusel topping, recipe follows
Caramel topping

-Preheat oven to 350F.
-Combine flour and sugar. Cut butter into mixture until crumbly. Press evenly onto a 13x9 inch pan lined with foil. Bake for 15 minutes.
-Combine cream cheese with sugar and beat until smooth. Add eggs and vanilla.
-Pour over warm crust and spread evenly.
-Combine chopped apples, 2tbsp sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture.
-Sprinkle evenly with streusel topping.
-Bake for 30 minutes, or until filling is set. Drizzle with caramel.

Streusel topping: combine all these ingredients together:
1cup brown sugar, 1 cup flour, 1/2 cup oats, 1/2 c butter
