Wellness meals


LLUMC Employee Wellness have partnered with BMC Cafe to come out with :: Employee Wellness boxed lunches!! Basically, these meals meet the heart-healthy guidelines with nutritional analysis done.

Each meal includes a ½ sandwich, fruits, fresh vegetables and yogurt...
The wellness meal guideline:
Calories: 300-500
Total Fat: 10-12 g
Sodium: 500 mg or less
Cholesterol: <100mg


The 2 (yummy!)sandwich options:-

Herb Grilled Chicken with Walnuts and Cranberries
Veggie turkey slices on 12-grain bread sandwiched between avocados, tomatoes, carrots, red bell pepper and red onions
Nutrition Facts: 410 Calories, 8g Fat, 476mg Sodium

Wed: Nutrition for Exercise

Tasty Bites- bite size energy bars. This recipe was created by several classmates in the Food Science class that i took some years ago. Jill Pollock ( the administrator of BMC) loved it so much that she wants the recipe! :)

Thursday: Healthy weight management

We had smoothies along with the weight management theme...

A blend of blueberries, strawberries, bananas, strawberry yogurt, blueberry yogurt, plain yogurt, apple juice and ice.
As for Friday's "Go VEGETARIAN" topic, I was so busy that I didn't get a chance to take pictures of our delicious whole wheat tortilla wraps. One had a spread of roasted red peppers cream cheese while the other was a hummus-style version. Both were filled with veggie turkey, lettuce, shredded carrots, grilled eggplant, zucchini and squash.

I made this layered cake today! It is a regular sponge cake with freshly whipped cream, vanilla yogurt and mangoes between each layer. I decorated it by alternating strawberries and mangoes around the edges.
